Nibby Cream Cheese Brownie Cupcakes Recipe

- 4 oz semi-sweet chocolate, roughly chopped (I used Scharffen Berger 62%)
- 5 T unsalted butter, room temperature, divided
- 3 oz cream cheese, room temperature
- 1 cup sugar, divided
- 3 eggs, room temperature1/2 cup + 1 T AP flour, divided
- 1 1/2 t vanilla, divided
- 1/2 t baking powder
- 1/4 t salt
- 1/2 cup cacao nibs

,%20the%20breakfast%20and%20assorted%20goodies%20from%20the%20Highland%20Bakery.%20But%20nonetheless,%20as%20soon%20as%20I%20got%20home%20the%20first%20thing%20I%20really%20wanted%20to%20do%20was%20bake.%20It%20is%20amazing%20to%20me%20how%20much%20of%20my%20de-stressing%20takes%20place%20in%20the%20kitchen%20with%20a%20mixer%20and%20a%20scale%20in%20front%20of%20me.%3C/p%3E%3Cp%3ESo%20when%20I%20was%20catching%20up%20on%20my%20blog%20reading%20and%20came%20across%20these%20brownies%20at%20Use%20Real%20Butter,%20I%20knew%20I%20was%20going%20to%20make%20them.%20I%20love%20cream%20cheese%20brownies,%20and%20I%20love%20even%20more%20the%20idea%20of%20a%20recipe%20that%20has%20been%20tried%20and%20tested%20for%20baking%20in%20individual%20cups.%3C/p%3E%3Cp%3EThis%20recipe%20did%20not%20disappoint.%20I%20should%20explain%20that%20while%20I%20was%20trying%20to%20decide%20if%20the%20recipe%20would%20make%20enough%20batter%20for%20a%20standard%20muffin%20tin%20(and%20I%20am%20still%20not%20sure),%20I%20decided%20to%20double%20the%20recipe%20and%20also%20make%20mini%20cupcakes%20(and%20also%20I%20decided%20right%20there%20to%20send%20a%20lot%20to%20John%E2%80%99s%20work)%20so%20I%20could%20compare%20the%20mini%20and%20standard%20cupcakes.%20As%20a%20result,%20I%20am%20not%20100%25%20if%20the%202%20pans%20hold%20the%20same%20amount%20of%20batter,%20i.e.,%20if%20a%20single%20batch%20of%20these%20brownies%20fits%20either%20of%20these%20pans%20perfectly.%20What%20I%20do%20know%20is%20this:%20both%20brownies%20were%20awesome,%20and%20the%20mini%20cupcakes%20were%20so%20cute,%20delectable,%20better%20for%20the%20waistline,%20etc.,%20that%20next%20time%20I%20would%20make%20the%20mini%20cupcakes%20and%20just%20be%20prepared%20to%20dump%20extra%20batter%20into%20mini%20loaf%20pans%20if%20necessary.%20Mini%20loaf%20pans%20are%20an%20absolute%20workhorse%20in%20my%20kitchen%20for%20this%20reason.%20Let%20me%20know%20if%20you%20try%20a%20single%20batch%20in%20either%20size%20of%20tin.%3C/p%3E%3Cp%3EYour%20feelings%20for%20which%20you%20prefer%20might%20also%20depend%20on%20the%20shape%20of%20your%20mini%20muffin%20tin%E2%80%93my%20mini%20muffin%20wells%20are%20wider%20and%20flatter%20(Chicago%20Metallic),%20thus%20giving%20each%20cupcake%20a%20greater%20ratio%20of%20cream%20cheese%20to%20chocolate,%20as%20you%20might%20be%20able%20to%20tell%20from%20the%20pictures.%20And%20I%20really%20like%20a%20prominent%20cream%20cheese%20topping.%3C/p%3E%3Cp%3ENibby%20Cream%20Cheese%20Brownie%20Cupcakes%3C/p%3E%3Cp%3EPreheat%20oven%20to%20350%20F.%3C/p%3E%3Cp%3EButter%20your%20muffin%20tins%E2%80%93the%20standard%20size%20tins%20were%20more%20likely%20to%20stick,%20so%20butter%20them%20extra%20well.%20I%20doubled%20this%20recipe%20and%20used%20a%20mini%20muffin%20tin%20and%20a%20standard%20muffin%20tin%E2%80%93I%20am%20uncertain%20how%20much%20each%20tin%20holds,%20so%20I%20am%20not%20sure%20if%20a%20single%20batch%20of%20this%20recipe%20will%20perfectly%20fit%20either%20tin.%20My%20advice%20is%20to%20just%20go%20for%20it%E2%80%93and%20be%20prepared%20to%20either%20fill%20some%20muffin%20wells%20with%20water%20or%20bake%20a%20few%20mini%20loafs%20in%20addition.%3C/p%3E%3Cp%3EMelt%20the%20chocolate%20and%203%20tablespoons%20of%20butter%20in%20the%20microwave%20at%2050%25%20power%20in%2030%20second%20intervals.%20Whisk%20smooth%20when%20it%20is%20melted.%20Set%20aside.%3C/p%3E%3Cp%3EIn%20a%20medium%20bowl,%20cream%20the%20remaining%202%20tablespoons%20of%20butter%20with%20the%20cream%20cheese.%20Gradually%20add%20in%201/4%20cup%20of%20sugar,%20beating%20until%20fluffy.%20Blend%20in%20one%20egg,%20a%20tablespoon%20of%20flour,%20and%201/2%20teaspoon%20of%20vanilla.%20Set%20aside.%3C/p%3E%3Cp%3EIn%20a%20mixing%20bowl,%20beat%20two%20eggs%20until%20they%20are%20light%20colored%20and%20slowly%20beat%20in%20the%20remaining%203/4%20cup%20of%20sugar%20until%20the%20mixture%20thickens.%20Add%20the%20baking%20powder,%20salt,%20and%201/2%20cup%20of%20flour.%20Blend%20in%20the%20chocolate%20mixture%20and%201%20teaspoon%20of%20vanilla.%20Fold%20in%20the%20cacao%20nibs.%3C/p%3E%3Cp%3EDollop%20chocolate%20batter%20into%20each%20muffin%20well,%20aiming%20to%20use%20between%201/2%20and%202/3%20of%20the%20chocolate%20batter.%20Gently%20shake%20the%20pan%20to%20even%20out%20the%20batter%20and%20then%20divide%20the%20cream%20cheese%20batter%20between%20the%20muffin%20wells,%20again%20gently%20shaking%20the%20pan%20to%20spread%20the%20cream%20cheese%20batter%20evenly%20over%20the%20chocolate%20batter.%20(The%20batter%20will%20nearly%20fill%20the%20muffin%20wells.)%20Spoon%20the%20remaining%20chocolate%20over%20the%20tops%20and%20run%20a%20knife%20or%20toothpick%20through%20the%20batter%20to%20marble%20it%E2%80%93I%20found%20the%20chocolate%20batter%20to%20be%20much%20thicker%20than%20the%20cream%20cheese%20batter,%20and%20hence%20the%20marbling%20was%20not%20so%20easy,%20but%20do%20not%20worry%20about%20it%20as%20it%20will%20all%20look%20ok%20in%20the%20end.%20Bake%20for%2020%20minutes%20(or%20so)%20for%20a%20standard%20size%20muffin%20tin%20and%2012-15%20minutes%20for%20a%20mini%20muffin%20tin%E2%80%93be%20sure%20to%20use%20your%20nose%20and%20a%20toothpick%20test%20(when%20the%20toothpick%20comes%20out%20clean)%20as%20well.%20Let%20cool%20for%205%20minutes%20in%20the%20pan%20and%20then%20gently%20pry%20out%20of%20the%20pan%20to%20cool%20on%20a%20cooling%20rack.%3C/p%3E){kind=link}
