  • Braciole Stuffed with Spinach and Italian Sausage
  • 1 1/2 lbs flank steak
  • 1 lb of hot Italian sausage, casings removed (if the sausage isn't spicy add a pinch of red pepper flakes)
  • 2 cloves garlic, minced
  • 1/2 cup dried Italian bread crumbs
  • 2/3 cup grated Parmigiano Reggiano
  • 1 Tbsp chopped fresh thyme
  • 2 Tbsp chopped fresh Italian parsley
  • 2 cups fresh packed spinach
  • salt and freshly ground black pepper tt
  • 1 cup dry white wine
  • 3 cups basic marinara sauce (homemade or a good jarred sauce)
  • 1/2 lb crimini mushrooms, cleaned and sliced
  • 1 garlic clove, minced
  • 2 Tbsp butter
