;%20and%202.%20(And%20this,%20I%20hope,%20is%20a%20stroke%20of%20genius)%20Pimento%20cheese.%3C/p%3E%3Cp%3EThe%20first%20would%20signal%20that%20this%20is%20a%20good%20old-fashioned%20grilled%20cheese%20(yielding%20the%20right%20color);%20the%202nd%20would%20add%20a%20mysterious%20punch%20from%20the%20peppers%20and%20the%20creamy,%20artery-clogging%20mayonnaise.%20I%20shmeared%20the%20pimento%20on%20the%20bread%20and%20piled%20the%20cheddar%20on%20the%20other%20side.%3C/p%3E%3Cp%3EAt%20Craig%E2%80%99s%20request,%20I%20added%20sliced%20tomato%20with%20a%20little%20bit%20of%20salt.%3C/p%3E%3Cp%3EA%20generous%20dollop%20of%20butter%20went%20into%20a%20hot%20non-stick%20skillet:%3C/p%3E%3Cp%3EWhen%20the%20foam%20subsided,%20and%20the%20butter%20was%20hot,%20I%20employed%20a%20curious%20technique:%20I%20added%20the%20sandwich,%20rubbed%20it%20in%20the%20melted%20butter%20and%20immediately%20flipped%20it.%20The%20idea%20was%20to%20coat%20one%20side%20with%20some%20of%20the%20butter%20and%20to%20coat%20the%20other%20side%20with%20the%20rest%20of%20the%20butter.%20If%20I%E2%80%99d%20just%20fried%20that%20one%20side,%20by%20the%20time%20I%20flipped%20it,%20there%20wouldn%E2%80%99t%20be%20any%20butter%20left%20in%20the%20pan%20and%20I%E2%80%99d%20have%20to%20add%20more.%20I%20have%20to%20say,%20this%20technique%20worked%20really%20well.%3C/p%3E%3Cp%3ESee%20how%20the%20bread%E2%80%99s%20coated%20in%20butter%20on%20top,%20but%20it%E2%80%99s%20the%20other%20side%20that%E2%80%99s%20frying%20in%20butter?%20That%20way,%20when%20I%20flipped%20it%20again,%20that%20top%20side%20would%20get%20a%20good%20fry%20too.%20Which%20is%20exactly%20what%20happened.%3C/p%3E%3Cp%3EMy%20only%20mistake%20was%20keeping%20the%20heat%20too%20high.%20I%20should%E2%80%99ve%20lowered%20it%20after%20the%20first%20flip%20so%20the%20cheese%20had%20time%20to%20melt.%20I%20solved%20that%20problem%20by%20covering%20the%20pan%20with%20the%20lid%20but%20I%20had%20to%20act%20quickly%20before%20the%20bread%20burned.%20Still,%20things%20came%20out%20pretty%20great.%3C/p%3E%3Cp%3EThere%E2%80%99s%20a%20considerable%20ooze%20factor.%20And%20I%20freshened%20things%20up%20by%20serving%20a%20cucumber/onion%20salad%20on%20the%20side%20(just%20sliced%20cucumber,%20yellow%20onion,%20salt,%20pepper,%20a%20pinch%20of%20sugar,%20red%20wine%20vinegar,%20olive%20oil).%20It%20was%20a%20good%20acidic%20foil%20to%20the%20buttery,%20fatty%20grilled%20cheese.%3C/p%3E%3Cp%3EBut%20what%20a%20grilled%20cheese%20it%20was!%20I%20said%20to%20Craig,%20who%20got%20his%20own%20version%20of%20this,%20that%20this%20was%20one%20of%20the%20best%20grilled%20cheeses%20I%E2%80%99ve%20had.%20The%20bread%20really%20made%20it%20sing%20(challah%20would%20work%20nicely%20too)%20and%20the%20pimento%20cheese%20took%20it%20over%20the%20edge.%3C/p%3E%3Cp%3ENow%20it%E2%80%99s%20your%20turn!%20Head%20over%20to%20the%20Grilled%20Cheese%20Academy%20and%20submit%20your%20most%20creative%20and%20unique%20grilled%20cheese%20recipe%20and%20win%20big%20prizes.%20Since%20I%20sent%20you,%20I%20hope%20you%E2%80%99ll%20split%20your%20winnings%20with%20me.%20It%E2%80%99s%20only%20fair.%3C/p%3E%3Cp%3ETags:%20best-of,%20cheese,%20contests,%20grilled%20cheese,%20pimento%20cheese,%20Wisconsin%20Cheese%3C/p%3E%3Cp%3ECategories:%20Sponsored%20Posts%3C/p%3E){kind=link}
