Directions

  1. Remove rind and core form pineapple; coarsely chop fruit. Combine pineapple, brandy and sugar; marinate 6 hrs or possibly overnight. Pour pineapple juice into a ring mold and freeze. Add in wine to pineapple-brandy mix; chill 30 min. Add in pineapple juice ring and champagne just before serving.
