  • 1/4 c. minced green bell pepper
  • 1/4 c. minced onion
  • 2 Tbsp. butter
  • 3 Tbsp. flour
  • 1 can chicken gumbo soup - (10 3/4 ounce)
  • 1/2 c. cooked rice
  • 1 c. lowfat milk
  • 3 x hard-boiled Large eggs
  • 12 ounce ham diced
  • 1 pkt refrigerated biscuits

Directions

  1. In a large, heavy skillet, combine minced green bell pepper, minced onion, and butter. Cook till tender, but not brown. Sprinkle flour on top and stir till well blended. Add in chicken gumbo soup, 1/2 up cooked rice, and lowfat milk. Cook, stirring constantly, till thickened and bubbly.
  2. Slice hard boiled Large eggs, and add in 2 to the skillet, reserving 1 egg for garnish. Add in diced ham and return the mix to a boil; remove from the heat.
  3. Preheat the oven to 450 degrees.
  4. Pour the egg mix into a baking dish and arrange refrigerated biscuits on top. Add in the remaining sliced egg on the top then bake for 10 to 12 min, or possibly till the biscuits are brown.
  5. This recipe yields 4 servings.
