  • 3 tbsp. vegetable oil
  • 1 1/2 teaspoon salt
  • 3/4 c. sugar
  • 2 tbsp. flour
  • 2 egg yolks
  • 1 c. lowfat milk
  • Juice and zest of 1 lemon
  • 2 egg whites, stiffly beaten
  • 1 jar mince meat

Directions

  1. Mix all ingredients, except egg whites, till smooth consistency. Gently mix in egg whites. Pour mix into a 10 inch pie pan. Bake at 425 degrees for 10 min, reduce heat to 350 degrees and cook 45-50 min. Top should be spongy and nicely browned.
