%3C/p%3E%3Cp%3EMonday:%20%20Its%20a%20cloudy,%20overcast%20day...so%20soup%20is%20on%20the%20menu%20for%20tonight.%20%20This%20sounded%20really%20good,%20it's%20vegetarian%20(after%20the%20mass%20amount%20of%20meat%20last%20night%20I%20though%20that%20it%20was%20fitting),%20and%20very%20simple%20to%20make.%20%20I%20might%20serve%20with%20a%20side%20salad%20if%20I%20can%20find%20any%20decent%20leftover%20lettuce%20in%20my%20fridge.%3C/p%3E%3Cp%3EMoroccan%20Spiced%20Soup%20%20(adapted%20from%20the%20Food%20Network)%3C/p%3E%3Cp%3EIngredients%3C/p%3E%3Cp%3EDirections%3C/p%3E%3Cp%3EHeat%20olive%20oil%20in%20a%20large%20pot%20over%20medium-high%20heat.%20Add%20onion%20and%20garlic%20and%20saute%20until%20the%20onions%20begin%20to%20turn%20translucent;%20lower%20heat%20if%20browning%20starts%20to%20occur.%20Add%20spices%20and%20saute%20a%20minute%20or%20so.%20Add%20tomatoes,%20chickpeas,%20broth,%20and%20sugar.%20Season%20with%20a%20couple%20pinches%20of%20salt%20and%2010%20grinds%20fresh%20pepper.%20Stir%20well.%20Chickpeas%20should%20be%20just%20covered%20with%20liquid.%20If%20level%20is%20shy,%20add%20some%20water%20so%20the%20chickpeas%20are%20just%20covered.%3C/p%3E%3Cp%3EBring%20to%20a%20simmer,%20then%20lower%20heat%20to%20low%20and%20gently%20simmer%20for%2045%20minutes.%3C/p%3E%3Cp%3ERemove%20soup%20from%20heat.%20Use%20a%20potato%20masher%20to%20mash%20up%20some%20of%20the%20chickpeas%20right%20in%20the%20pot.%20Stir%20in%20the%20spinach%20and%20let%20heat%20through%20until%20wilted,%20just%20a%20couple%20minutes.%3C/p%3E%3Cp%3ESeason%20again,%20to%20taste,%20with%20salt%20and%20pepper.%3C/p%3E%3Cp%3EServe%20soup,%20drizzled%20lightly%20with%20extra-virgin%20olive%20oil,%20if%20desired.%3C/p%3E){kind=link}
