Making Kulfi. Easy, Beautiful Indian Ice Cream, No Machines! Recipe
Ingredients
- In a large bowl mix together:
- 1 can of evaporated milk
- 1 can of swetened condensed milk
- 2 cups of whipping cream
- Mix everything well together and add in:
- 1/2 cup of finely ground pistachios
- 5 green cardamom

%20one%20of%20which%20is%20the%20need%20to%20freeze%20the%20mixer%20bowl%20for%20at%20least%2024%20hours%20before%20any%20ice%20cream%20can%20be%20made.%20Sure%20there%20are%20automatic,%20all-in-one%20units%20that%20will%20give%20you%20instant%20ice%20cream%20just%20by%20flipping%20the%20switch%20any%20time%20one%20desires%20it.%20But%20I%20kind%20of%20look%20on%20my%20machine%20as%20good%20pants%20emergency%20brake.%20It%20keeps%20me%20from%20going%20too%20ice%20cream%20crazy%20too%20easily.%20If%20I%20want%20to%20eat%20ice%20cream,%20I%20have%20to%20think%20about%20it%20for%2024%20hours%20at%20least.%20It%20allows%20for%20cooler%20heads%20(and%20some%20extra%20workout%20time)%20to%20prevail.%20Of%20course%20once%20my%20bowl%20is%20frozen%20I%20just%20need%20to%20flip%20a%20switch%20and%2030%20minutes%20later%20I'm%20eating%20ice%20cream,%20so%20there%20is%20that.%3C/p%3E%3Cp%3EI%20thought%20okay,%20I%20don't%20have%20official%20kulfi%20molds%20like%20the%20kulfiwallahs,%20so%20why%20try.%20And%20then%20I%20went%20to%20my%20gleaning%20pal%20%20Kristens'%20tag%20sale%20and%20found%20this%20for%20a%20dollar!%3C/p%3E%3Cp%3EIt%20was%20begging%20to%20be%20filled%20with%20creamy,%20mangoey,%20nutty%20goodness.%20It%20called%20to%20me..%20.buy%20me%20buy%20me,%20you%20know%20you%20want%20kulfi.%20Just%20do%20it.%20So,%20I%20did.%3C/p%3E%3Cp%3EThe%20next%20thing%20was%20finding%20the%20best%20way%20to%20make%20kulfi.%20There%20are%20a%20lot%20of%20recipes%20out%20there%20and%20a%20lot%20of%20techniques.%20Many%20ways%20of%20making%20classic%20kulfi%20involve%20reducing%20milk%20that's%20been%20sweetened%20and%20flavored%20down%20to%20evaporated%20milk%20consistency%20by%20slow%20cooking,%20usually%20in%20clay%20pots%20and%20lots%20of%20stirring.%20Since%20this%20dessert%20was%20once%20reserved%20for%20Indian%20royalty,%20finding%20ice%20and%20elbow%20grease%20was%20not%20anything%20they%20had%20to%20worry%20about%20much.%20They%20had%20people%20to%20take%20care%20of%20that%20for%20them.%3C/p%3E%3Cp%3ENow%20that's%20all%20well%20and%20good,%20and%20I%20may%20actually%20decide%20to%20do%20it%20that%20way%20one%20of%20these%20days.%20But%20right%20now%20we're%20in%20the%20finishing%20stages%20of%20our%20latest%20script,%20and%20the%20only%20thing%20that%20I'm%20thinking%20about%20reducing%20is%20the%20page%20count.%20Luckily%20(since%20I%20don't%20have%20a%20palace%20staff%20at%20my%20beck%20and%20call)%20there's%20another%20easier%20way%20to%20tackle%20this%20dessert,%20and%20that's%20using%20a%20combination%20of%20evaporated%20milk,%20condensed%20milk%20and%20cream,%20minimal%20stirring%20involved.%3C/p%3E%3Cp%3EOne%20of%20the%20classic%20flavors%20of%20kulfi%20is%20mango...think%20of%20it%20as%20the%20kulfi%20equivalent%20of%20vanilla%20ice%20cream.%20%20So%20that's%20what%20I%20made.%20With%20a%20minimum%20of%20work%20and%20a%20few%20hours%20of%20freezing,%20I%20was%20eating%20fabulous%20mango%20kulfi.%3C/p%3E%3Cp%3EKulfi%3C/p%3E%3Cp%3EHere's%20what%20to%20do:%3C/p%3E%3Cp%3EPeel%20and%20chunk%20up%202%20ripe%20mangos%3C/p%3E%3Cp%3EPut%20them%20in%20a%20blender%20or%20food%20processor%20and%20reduce%20to%20a%20puree.%20Set%20aside.%3C/p%3E%3Cp%3ERemove%20the%20seeds%20and%20grind%20them%20to%20a%20powder.%20Add%20it%20into%20the%20mix.%3C/p%3E%3Cp%3EFinally%20mix%20in%20the%20mango%20puree.%3C/p%3E%3Cp%3EWhen%20everything%20is%20blended,%20pour%20the%20mixture%20into%20a%20mold%20or%20a%20round%20stainless%20steel%20mixing%20bowl,%20or%20popsicle%20molds,%20whatever%20you%20have.%3C/p%3E%3Cp%3ECover%20the%20top%20of%20the%20mold%20with%20foil%20so%20that%20it's%20sealed%20tightly%20and%20set%20it%20into%20the%20freezer%20for%20the%20next%204%20to%206%20hours.%3C/p%3E%3Cp%3ETo%20unmold%20%20run%20some%20hot%20or%20warm%20water%20over%20the%20bottom%20of%20the%20mold%20and%20place%20it%20over%20the%20serving%20pate%20or%20dish...unmold!%3C/p%3E%3Cp%3ECut%20it%20into%20slices%20and%20serve%20it%20up!%3C/p%3E%3Cp%3EKulfi%20is%20a%20creamy,%20dense%20dessert,%20very%20refreshing%20on%20a%20hot,%20early%20Fall%20evening%20or%20after%20a%20spicy%20Indian%20feast.%20No%20elbow%20grease%20churning%20re%20freezing%20or%20machinery%20involved.%3C/p%3E%3Cp%3EI%20loved%20this%20dessert!%20So%20did%20everyone%20else%20at%20the%20table.%20I%20was%20wondering%20where%20this%20treat%20had%20been%20all%20my%20life!%20I%20should%20have%20made%20kulfi%20years%20ago,%20but%20now%20that%20I%20know%20how%20easy%20it%20is,%20I'm%20certainly%20going%20to%20be%20making%20it%20more%20often.%20I%20can't%20wait%20to%20experiment%20with%20other%20flavor%20options.%3C/p%3E%3Cp%3EThe%20next%20thing%20on%20my%20must%20have%20list%20are%20real%20pyramid%20shaped%20kulfi%20molds%20and%20hitting%20up%20more%20tag%20sales%20in%20the%20hope%20of%20unearthing%20some%20interestingly%20shaped%20vintage%20jello%20molds.%20I'm%20also%20determined%20in%20my%20quest%20for%20old%20skool%20authenticity%20to%20try%20making%20this%20treat%20in%20clay%20the%20ol
