%3C/p%3E%3Cp%3EJanis:%20I%20don't%20feel%20like%20any%20of%20them%20OR%20cooking%3C/p%3E%3Cp%3EDr.%20Food:%20Want%20to%20get%20something%20delivered?%3C/p%3E%3Cp%3EJanis:%20I%20dunno....%3C/p%3E%3Cp%3ESee%20why%20I%20haven't%20been%20blogging?%3C/p%3E%3Cp%3EWe%20went%20to%20the%20grocery%20store%20for%20meager%20provisions%20and%20while%20there%20scored%202%20really%20meaty%20lamb%20shanks.%20I%20got%20motivated%20for%20half%20a%20second%20and%20we%20made%20Brad%20Farmerie's%20Moroccan%20lamb%20shank%20with%20goat%20cheese%20grits%3C/p%3E%3Cp%3EOk,%20so%20I%20hate%20grits.%20I%20simply%20substituted%20for%20mashed%20potatoes.%20Shut%20up,%20I%20know%20they%20were%20instant%20mashed%20potatoes.%20I%20have%20the%20flu.%20I%20had%20the%20flu.%20Whatever.%3C/p%3E%3Cp%3EOh,%20I%20also%20forgot%20the%20apricots.%20Still,%20this%20was%20a%20great%20dish.%3C/p%3E%3Cp%3ESo,%20this%20week%20I%20am%20gearing%20up%20for%20a%20Cassoulet%20dinner%20party.%20That%20means%20a%20LOT%20of%20cooking.%20Is%20there%20a%20Cassoulet%20take-out?%3C/p%3E%3Cp%3EPreheat%20oven%20to%20325%20degrees%20F.%3C/p%3E%3Cp%3EPlace%20the%20olive%20oil,%20onion,%20garlic,%20and%20ginger%20in%20a%20pot%20and%20place%20over%20medium%20heat,%3C/p%3E%3Cp%3EStir%20the%20contents,%20cooking%20for%205-6%20minutes%20(or%20until%20they%20begin%20to%20soften),%3C/p%3E%3Cp%3EAdd%20the%20carrots,%20celery,%20and%20spices%20(cumin,%20coriander,%20cinnamon,%20star%20anise,%20saffron,%20and%20oregano)%20and%20continue%20to%20cook%20over%20medium%20heat%20for%203-4%20minutes,%20stirring%20all%20the%20time.%3C/p%3E%3Cp%3EAdd%20the%20chicken%20stock,%20canned%20tomatoes,%20and%20apricots,%20increase%20the%20heat,%20and%20bring%20to%20a%20boil.%3C/p%3E%3Cp%3EPlace%20the%20sauce%20into%20a%20deep%20pyrex%20dish%20(or%20baking%20dish/casserole).%3C/p%3E%3Cp%3EPlace%20the%20lamb%20shanks%20onto%20the%20sauce,%20where%20they%20will%20submerge%20three-quarters%20of%20the%20way,%20and%20place%20in%20the%20oven%20uncovered.%3C/p%3E%3Cp%3EThe%20exposed%20lamb%20will%20brown%20in%20about%2020-30%20minutes,%20so%20you%20will%20need%20to%20check%20it%20and%20rotate%20within%20the%20sauce%20to%20expose%20a%20different%20portion%20of%20the%20shank.%20Continue%20checking%20and%20turning%20the%20lamb%20every%2030%20minutes%20until%20they%20are%20evenly%20browned.%3C/p%3E%3Cp%3ECook%20until%20the%20meat%20is%20starting%20to%20fall%20off%20of%20the%20bone%20and%20the%20sauce%20has%20thickened,%20about%202%20and%20a%20half%20hours%20(If%20they%20become%20completely%20browned%20and%20the%20sauce%20is%20thick%20but%20the%20meat%20is%20not%20tender,%20cover%20and%20cook%20until%20they%20are%20done).%3C/p%3E%3Cp%3ERemove%20from%20the%20oven,%20skim%20any%20visible%20fat%20that%20may%20have%20come%20to%20the%20surface%20and%20serve%20immediately%20garnished%20with%20olives,%20toasted%20almonds,%20and%20parsley%20or%20allow%20to%20cool%20to%20room%20temperature%20and%20place%20in%20oven%20safe%20serving%20dish%20and%20refrigerate%20until%20needed.%20To%20reheat,%20place%20covered%20dish%20in%20a%20325F%20oven%20for%20about%2030%20minutes.%3C/p%3E){kind=link}
