  • 3 lrg Large eggs -- separated
  • 1 stk (1/2 c.) unsalted butter softened
  • 1 1/2 tsp double-acting baking pwdr
  • 1 tsp baking soda
  • 1/2 tsp salt
  • 3/4 c. lowfat milk
  • 1 c. all-purpose flour
  • 1 Tbsp. sugar

Directions

  1. In a bowl whisk together the egg yolks, the softened butter, the baking pwdr, the baking soda, the salt, the lowfat milk, the flour, and the sugar till the mix is smooth. In another bowl with an electric mixer beat the egg whites till they just hold stiff peaks and fold them into the flour mix gently but thoroughly. Heat a griddle over moderately high heat till it is warm sufficient to make drops of water scatter over its surface and brush it with the melted butter. Working in batches, spoon sufficient of the batter onto the griddle to create 3-inch rounds, cook the pancakes for 1 to 2 min on each side, or possibly till they are golden brown, and transfer them as they are cooked to a heated platter. Serve with maple syrup and butter.
