- 2 cups flour
- 1/2 teaspoon baking soda
- 1/4 teaspoon salt
- 3/4 cup butter, softened
- 3/4 cup, plus 3 tablespoons sugar, divided
- 1 large egg
- 1 tablespoon lemon zest, grated
- 1 tablespoon lemon juice
- 1/3 cup finely chopped almonds (or you can use pistachios, pecans or walnuts)

%20and%20then%20you%20pop%20it%20into%20the%20fridge%20to%20firm%20up%20a%20bit.%3C/p%3E%3Cp%3EWe%20will%20be%20having%20our%20usual%20Easter%20Feast%20with%20the%20boy%20and%20his%20bride%20and%20a%20few%20other%20extended%20family%20members...and%20the%20boy%20informed%20me%20he%20is%20still%20not%20too%20old%20for%20an%20Easter%20basket%20...so%20of%20course%20I%20ran%20right%20out%20and%20started%20buying%20all%20his%20favorite%20things...enabling/spoiling%20is%20my%20specialty!%3C/p%3E%3Cp%3EIn%20a%20large%20bowl,%20sift%20together%20flour,%20baking%20soda%20and%20salt.%20%20Set%20aside.%20%20In%20the%20bowl%20of%20an%20electric%20mixer%20cream%20butter%20and%203/4%20cup%20sugar%20until%20light%20and%20fluffy.%20%20Beat%20in%20egg,%20mixing%20until%20just%20combined.%20%20Add%20lemon%20zest%20and%20lemon%20juice.%20%20Blend%20in%20dry%20ingredients,%20mix%20thoroughly%20until%20all%20combined.%3C/p%3E%3Cp%3ESpread%20a%20piece%20of%20plastic%20wrap%20onto%20counter,%20scoop%20dough%20out%20onto%20plastic%20wrap%20and%20shape%20into%20a%20long%20log,%20about%201%201/2-inches%20thick%20and%2016-inches%20long.%20%20Wrap%20log%20in%20plastic%20wrap%20and%20refrigerate%20dough%20for%201%20hour.%20%20Preheat%20oven%20to%20350%20degrees.%20Remove%20dough%20from%20refrigerator%20and%20carefully%20remove%20plastic%20wrap.%20%20Place%20chopped%20almonds%20in%20remaining%203%20tablespoons%20sugar%20and%20stir%20to%20coat.%20%20Spread%20chopped%20almonds%20on%20plastic%20wrap%20and%20roll%20dough%20in%20almonds,%20coating%20all%20around.%20%20Slice%20dough%20into%20just%20under%20%201/2-inch%20slices.%20%20You%20should%20be%20able%20to%20get%20about%2036%20cookie%20slices.%20%20Place%20on%20un-greased%20baking%20sheets%20and%20bake%2010%20to%2012%20minutes%20until%20golden%20brown.%20%20Transfer%20to%20racks%20to%20cool.%20%20Makes%20about%2036%20two-inch%20cookies.%3C/p%3E){kind=link}
