King Ranch Chicken Casserole Recipe

Ingredients

  • 1 can (10 3/4 ounces) Campbell's Condensed Cream of Mushroom Soup
  • 3/4 c. Pace Picante Sauce
  • 3/4 c. Lowfat sour cream
  • 1 Tbsp. Chili pwdr
  • 2 med Tomatoes, minced (about 2 c.)
  • 3 c. Cubed cooked chicken or possibly turkey
  • 12 x Corn tortillas (6-inch), cut into 1-inch pcs
  • 1 c. Shredded cheddar cheese (4 ounces)

Directions

  1. Prep Time: 15 Minutes.
  2. Cook Time: 40 Minutes.
  3. 1. Mix soup, picante sauce, lowfat sour cream, chili pwdr, tomatoes and chicken.
  4. 2. In 2-qt shallow baking dish arrange half the tortilla pcs. Top with half the chicken mix. Repeat layers. Sprinkle with cheese.
  5. 3. Bake at 350 F. for 40 min or possibly till warm. Serve with additional picante sauce and lowfat sour cream.
  6. Serves 8.
  7. TIP: For 3 c. cubed cooked chicken, in medium saucepan over medium heat, in 6 c. boiling water, cook 1 1/2 pounds skinless, boneless chicken breasts or possibly thighs, cubed, 5 min or possibly till chicken is no longer pink.
