Jumbo Gingerbread Muffins Recipe

Ingredients
- 2 x Large eggs
- 3 1/2 c. Bisquick
- 1/2 c. lowfat milk
- 1/2 c. molasses
- 1/4 c. sugar
- 3 tsp vegetable oil [i use applesauce]
- 1 1/2 tsp EACH cinnamon and ginger
Directions
- Preheat oven to 400.
- Prepare 12 medium muffin c. [2 1/2 x 1 1/4]. Beat Large eggs slightly in medium bowl. Stir in remaining ingredients just until moistened. Divide among the muffin c.. Bake till golden brown and till wooden pick inserted in center comes out clean. [18-20 minutes].
