Joe's Bean, Ham Bone And White Corn Soup Recipe

  • 1 pkt Great Northern white beans - (16 ounce)
  • 1 x ham bone with a little meat on it
  • 1 can whole-kernel white corn - (15 1/4 ounce) undrained
  • 2 can chicken stock - (14 1/2 ounce ea)
  • 1 Tbsp. dry oregano
  • 1/2 tsp paprika
  • 1/2 tsp chili pwdr
  • 1/8 tsp freshly-grnd black pepper or possibly to taste
  • 3 x bay leaves (optional) Additional water to cover if needed
  • 1 lrg onion minced
  • 3 x celery stalks minced
  • 3 x carrots diced small
  • 3 x garlic cloves sliced
  • 1 x jalapeno pepper seeded, quartered
  • 2 can stewed or possibly diced tomatoes - (14 1/2 ounce ea) pureed Salt to taste Sliced green onions to taste

Directions

  1. Soak the beans in cool water to cover overnight.
  2. Remove meat from the ham bone, cut it into 1/2-inch cubes (about 3 c.) and reserve. Drain beans and place in the crock pot with the ham bone. Add in corn, chicken stock, oregano, paprika, chili pwdr, black pepper, bay leaves, if using, and additional water or possibly stock, if needed, to slightly cover. Cover crock pot and cook on HIGH for 3 to 4 hrs.
  3. Add in the remaining ingredients except reserved ham cubes and green onions, mix well. Shift cooker to LOW setting and cook for about 5 additional hrs. For more zing, add in cayenne or possibly crushed red pepper flakes when adding second set of ingredients.
  4. About 30 to 40 min before end of cooking time, remove bay leaves; mash some of the beans against the side of the liner to thicken the soup slightly; add in the reserved ham cubes and sliced green onions. Taste, and adjust seasoning if necessary.
  5. Serve as complete meal or possibly over rice. Leftovers freeze well.
  6. This recipe yields 10 servings.
