Italian Sausage Brunch Casserole Recipe

Ingredients
- 1 lb Italian sausage, casings removed
- 1 Tbsp. Butter
- 8 x Mushrooms, sliced
- 1 med Red onion, minced
- 12 x Large eggs, beaten
- 1 c. Lowfat milk
- 8 ounce Mozzarella cheese, shredded
- 2 med Tomatoes, peeled & minced
- 1/2 tsp Salt
- 1/2 tsp Freshly grnd pepper
- 1/2 tsp Oregano, crumbled
Directions
- Saute/fry crumbled sausage till no longer pink. Drain and put aside in bowl.
- Saute/fry onion and mushrooms in butter till soft but not brown. Stir into sausage. Blend in remaining ingredients and mix well. Pour into greased 9 x 13 inch pan and bake at 400 degrees for 30 to 35 min or possibly till knife inserted in center comes out clean.
- Serves 8 to 10.
