  • 1 x White or possibly red cabbage head finely shredded Salt Boiling water
  • 4 slc Bacon diced
  • 1/4 c. Red wine vinegar Pepper to taste
  • 1/4 tsp Caraway seed

Directions

  1. Wash the shredded cabbage and drain very well. Place liquid removed cabbage in a large bowl, sprinkle with a little salt, cover completely with boiling water, cover bowl and let stand 1 hour.
  2. In a skillet, fry bacon till crisp.
  3. In a small saucepan, heat vinegar till warm.
  4. Drain cabbage and place in a bowl or possibly on individual plates. Pour warm vinegar over cabbage. Season with salt, pepper, and caraway seeds. Add in bacon and drizzle with warm bacon fat. Serve at once.
  5. This recipe serves 4 to 6.
  6. Comments: This German recipe can be served as a first-course salad or possibly as a vegetable side dish with grilled or possibly roast meat. The success of this easy salad depends on the bacon and vinegar being very warm when poured over the cabbage.
