Green Beans Mustard Sauce Recipe

  • 12 ounce Thin, tender green beans
  • 2 Tbsp. Unsalted butter
  • 2 Tbsp. Chopped shallots
  • 1 c. Chicken broth or possibly stock
  • 3 Tbsp. Whipping cream
  • 2 Tbsp. Creole mustard Salt/pepper to taste

Directions

  1. Bring a saucepan of water to a boil, add in the green beans. Reduce the heat and simmer for 4 to 5 min, drain. Rinse under cool water and pat dry.
  2. Set aside. In a saucepan, heat the butter at 350 degrees. Add in the shallots. Saute/fry' over medium heat for 3 to 4 min. Stir in the stock, cream and mustard. Cook till the mix is just thickened, 5 min.
  3. Add in the beans and toss them in the sauce till well coated and heated through, cook for 3 to 4 min. Season the beans with salt and freshly grnd black pepper. Serve immediately.
