Greek Chopped Meat Stuffing Recipe

Ingredients

  • 2 x Onions, minced
  • 1 stalk celery, minced
  • 2 Tbsp. Butter
  • 1 lb Grnd beef
  • 1 x Liver from turkey finely minced
  • 1 lb Mild breakfast sausage
  • 1/2 c. Dry red wine
  • 2 Tbsp. Tomato paste
  • 2 Tbsp. Minced fresh parsley
  • 1 Tbsp. Minced fresh dill
  • 3/4 lb Roasted chestnuts peeled & coarsely minced
  • 1/4 lb Pignoli nuts
  • 1/2 c. White raisins
  • 1/4 c. White rice
  • 1 c. -water
  • 1 lb White bread crumbs Salt and pepper to taste

Directions

  1. Brown onions and celery in butter. Add in beef, liver, and sausage and cook till brown. Add in wine and tomato paste, then herbs, and simmer till meat is tender. Add in nuts, raisins, and rice. Stir in water and cook, covered, till the rice is done. Fold in bread crumbs and season to taste. Stuff loosely into the turkey. Stuffs a 10-12 lb. turkey. -
