Gluten Free Irish Soda Bread Recipe

Ingredients

• 2 cups almond meal/flour
• 1/2 cup brown rice flour
• 1/2 teaspoon baking soda
• 1 teaspoon baking powder
• 1/4 cup organic coconut sugar
• 1 1/2 cup raisins
• 2 teaspoons caraway seeds
• 1 cup buttermilk
• 1 cup Greek yogurt
• 2 eggsINSTRUCTIONS
• Preheat oven to 350
• Grease one 9 inch round skillet or cake pan
• Combine flour, sugar, baking powder, baking soda, salt,raisins, and caraway seeds in a large bowl
• In separate a separate bowl,beat the eggs lightly, add the buttermilk and yogurt
• Combine with the flour mixture using a spoon
• When all is mixed,turn dough into a round pan
