%3C/p%3E%3Cp%3EAlthough%20I%20did%20not%20rediscover%20this%20recipe%20in%20June,%20it%20was%20perfect%20timing%20to%20make%20holidays%20gifts.%3C/p%3E%3Cp%3ETo%20get%20two%20cups,%20I%20used%20about%20twelve%20heads%20garlic.%3C/p%3E%3Cp%3E6%20thyme%20sprigs%3C/p%3E%3Cp%3E3%20small%20bay%20leaves%3C/p%3E%3Cp%3E3%20dried%20red%20chiles,%20such%20as%20chiles%20de%20arbol%3C/p%3E%3Cp%3EI%20used%20Thai%20peppers.%3C/p%3E%3Cp%3E2%20c.%20%20pure%20olive%20oil%3C/p%3E%3Cp%3ECombine%20all%20of%20the%20ingredients%20in%20a%20medium%20saucepan.%3C/p%3E%3Cp%3ESimmer%20over%20low%20heat%20until%20the%20garlic%20is%20tender%20but%20not%20browned,%20about%2030%20minutes.%20Let%20cool.%3C/p%3E%3Cp%3EUsing%20a%20slotted%20spoon,%20transfer%20the%20garlic,%20herbs%20and%20chiles%20to%20three%201/2-pint%20canning%20jars,%20dividing%20the%20chiles%20and%20herbs%20between%20the%20three%20jars.%20Pour%20the%20cooking%20oil%20on%20top,%20seal%20and%20refrigerate%20for%20up%20to%204%20months.%3C/p%3E%3Cp%3EDo%20you%20how%20long%20it%20takes%20to%20separate%20and%20peel%20two%20cups%20of%20garlic?%20%20%20Luckily,%20it%20was%20a%20beautiful%20day%20and%20I%20sat%20on%20the%20patio%20step%20and%20peeled%20away.%3C/p%3E%3Cp%3EAs%20this%20was%20simmering,%20it%20made%20the%20whole%20house%20smell%20like%20a%20trattoria.%3C/p%3E%3Cp%3EI%20am%20pretty%20excited%20to%20say%20that%20besides%20the%20olive%20oil,%20this%20is%20a%20totally%20locally%20made%20recipe.%20%20%20I%20clipped%20the%20thyme%20from%20the%20herb%20garden,%20plucked%20the%20bay%20leaves%20(that%20were%20grown%20on%20my%20bay%20laurel%20tree)%20from%20where%20they%20were%20drying%20overhead%20in%20the%20kitchen%20as%20I%20did%20with%20the%20Thai%20chili%20peppers%20that%20were%20also%20hanging.%3C/p%3E%3Cp%3EI%20couldn%E2%80%99t%20wait%20for%20them%20to%20cool%20completely%20so%20I%20fished%20a%20clove%20out%20and%20spread%20it%20on%20a%20cracker.%20%20%20Delicious!%3C/p%3E%3Cp%3EBesides%20a%20cracker%20spread%20you%20can%20use%20it%20these%20ways%20according%20to%20Parisi:%3C/p%3E%3Cp%3EMash%20the%20garlic%20into%20butter%20and%20spread%20on%20bread.%3C/p%3E%3Cp%3ESlip%20under%20chicken%20skin%20before%20roasting.%20%20(For%20you%20oenophiles%20out%20there,%20pair%20the%20roasted%20chicken%20with%20a%20rich%20white%20like%20an%20Alsace%20Pinot%20Gris.)%3C/p%3E%3Cp%3EGarlic%20Confit%20from%20Eliot%E2%80%99s%20Eats.%3C/p%3E%3Cp%3EI%20think%20I%20would%20mix%20it%20with%20a%20little%20soft%20cheese%20too.%20%20%20Or,%20as%20previously%20stated,%20eat%20it%20right%20out%20of%20the%20jar%20on%20crackers%20or%20bread.%3C/p%3E%3Cp%3EAfter%20the%20jars%20are%20refrigerated,%20the%20olive%20oil%20turns%20into%20a%20solid.%20%20%20Make%20a%20great%20spread%20by%20just%20spooning%20out%20the%20solid%20confit%20and%20smash%20or%20puree%20it%20and%20then%20just%20spread%20on%20toasts%20or%20crackers.%3C/p%3E%3Cp%3E(I%20only%20got%20about%20two%20half-pint%20jars%20but%20if%20I%20have%20time%20to%20make%20more%20before%20the%20holidays,%20I%20will%20process%20this%20in%20the%20small%20quarter-pint-size%20jelly%20jars.)%3C/p%3E%3Cp%3ELike%20Loading...%3C/p%3E){kind=link}
