  • 250 gm Waitrose Reduced Fat Digestive Biscuits, (9oz)
  • 85 gm Butter, (3oz)
  • 150 ml Double cream, whipped to soft peaks (1/4 pint)
  • 1 x Waitrose Tangerine Jelly
  • 60 ml Squeezed clementine juice, (4tbsp)
  • 6 x Clementines
  • 200 ml Iced water, (7fl ounce)

Directions

  1. Lightly oil the base and sides of a 23cm (9") diameter deep flan tin. Break the biscuits into fine crumbs, heat the butter and mix with the biscuits.
  2. Press over the base and sides of the tin and refrigeratefor 15 min.
  3. Gently heat half the jelly in a pan with the clementine juice. As soon as it cools, fold it into the cream and spread over the biscuit base.
  4. Peel the clementines, divide into segments and arrange on the creamy jelly.
  5. Return to the fridge till hard.
  6. Gently heat the remaining jelly with a little of the water, remove from the heat and stir in the remaining iced water. When the jelly begins to set, spoon it carefully over the flan. Allow to set.
  7. NOTES : A delicious and easy way to enjoy fresh clementines, perfect for a family meal or possibly for a special occasion. Serve with some extra cream and a glass of orange liqueur. vegetable oil
