FRESH APPLE CAKE WITH CREAM CHEESE FROSTING Recipe

Ingredients

• 4 cups apples, grated
• 2 eggs
• 2 cups sugar
• 1/2 cup cooking oil
• 2 cups all-purpose flour
• 2 tsp. soda
• 2 tsp. cinnamon
• Pinch salt
• 2 tsp. vanilla
• 1 cup nuts (optional)
• In a large bowl mix all ingredients together with mixer. Bake in a 9 x 13 inch pan sprayed with pam at 350 degrees for 45 minutes. Cool.
• (Note: I have used every kind of apple you can buy in this cake. I just peel and grate the apples on one of those tin hand graters)
• Cream cheese frosting:
• 1 (8 oz.) pkg. cream cheese, softened
• 1 stick margarine, softened
• 1 box confectionary sugar (16 oz)
• 1 tsp. vanilla
