finding inspiration at the grocery store; $10 tomato sauce Recipe
Ingredients
- Roasted Butternut Tomato Sauce
- makes about 3 pints
- 1 1/2 pounds of butternut squash
- 2 medium carrots
- 1-2 stalks celery
- 3-4 cloves garlic
- 1 medium onion
- 1 cup button mushrooms, about 8-10
- 3 tablespoons olive oil
- 1 (28 oz) can plum tomatoes
- 3-4 sprigs fresh basil
- 1 tablespoon fresh thyme leaves
- 1-2 bay leaves (one if fresh are used)
- 3/4 teaspoon turmeric
- 3/4 teaspoon smoked paprika
- 1 1/2 cups vegetable broth, divided
- 2 tablespoons balsamic vinegar
- 1 teaspoon salt
- 1/2 teaspoon black pepper

%20is%20always%20a%20possibility%20but%20it%20does%20not%20say%20much%20for%20my%20own%20abilities%20in%20the%20kitchen.%20%20Having%20a%20constant%20stream%20of%20original%20recipe%20ideas%20is%20challenging%20and%20I%20never%20know%20where%20inspiration%20may%20strike.%20%20As%20some%20of%20you%20already%20know,%20I%20am%20a%20member%20of%20the%20Tuesdays%20with%20Dorie%20baking%20group%20and%20once%20a%20week,%20we%20post%20a%20recipe%20from%20either%20Baking%20with%20Julia%20or%20Baking%20Chez%20Moi.%20%20But%20that%20is%20only%20one%20day%20out%20of%20seven%20and%20what%20will%20I%20do%20for%20the%20other%20six%20days?%3C/p%3E%3Cp%3EOn%20a%20recent%20trip%20to%20the%20grocery%20store,%20I%20found%20my%20inspiration%20in%20the%20pasta%20and%20tomato%20sauce%20aisle.%20%20Actually,%20to%20be%20more%20accurate,%20I%20found%20myself%20stunned%20that%20anyone%20would%20pay%20nearly%20$10%20for%20a%20jar%20of%20tomato%20sauce.%20%20When%20I%20was%20growing%20up,%20the%20only%20tomato%20sauce%20we%20ate%20was%20my%20mothers%20homemade%20cooked%20they%20way%20my%20great-grandmother%20taught%20her%20to%20make%20sauce.%20%20It%20has%20always%20been%20the%20standard%20by%20which%20I%20judge%20tomato%20sauce.%20%20As%20my%20children%20were%20growing%20up,%20I%20found%20myself%20struggling%20to%20keep%20up%20and%20generally%20relied%20on%20a%20jar%20of%20sauce%20from%20the%20store.%20%20When%20money%20was%20short,%20and%20it%20frequently%20was,%20a%20jar%20of%20sauce%20and%20a%20pound%20of%20pasta%20could%20feed%20us%20affordably%20and%20there%20would%20be%20leftovers.%20%20Needless%20to%20say,%20$10%20for%20a%20jar%20of%20sauce%20nearly%20knocked%20me%20down;%20I%20am%20in%20the%20wrong%20line%20of%20work%20it%20seems!%3C/p%3E%3Cp%3EIt%20wasn%E2%80%99t%20hard%20to%20figure%20out%20what%20I%20would%20be%20making,%20photographing%20and%20posting%20on%20the%20blog%20after%20that.%20%20With%20so%20many%20interesting%20flavors%20to%20choose%20from,%20I%20decided%20I%20would%20make%20up%20a%20batch%20of%20sauce%20and%20leave%20the%20high%20dollar%20jars%20at%20the%20store.%20%20Knowing%20I%20had%20some%20butternut%20squash%20to%20work%20with,%20I%20decided%20on%20a%20batch%20of%20butternut%20tomato%20sauce.%20%20The%20two%20flavors%20compliment%20each%20other%20well.%20%20The%20squash%20which%20adds%20a%20nice%20velvety%20texture%20to%20the%20sauce%20also%20has%20enough%20natural%20sweetness%20to%20balance%20the%20acidity%20of%20the%20tomatoes%20without%20the%20addition%20of%20sugar.%3C/p%3E%3Cp%3EBecause%20I%20like%20a%20tomato%20sauce%20with%20more%20than%20tomatoes%20in%20it,%20I%20also%20chopped%20up%20some%20carrots,%20celery,%20mushrooms%20and%20onions%20too%20and%20tossed%20them%20with%20the%20butternut%20squash%20and%20a%20little%20olive%20oil.%3C/p%3E%3Cp%3ERoasting%20vegetables%20gives%20color%20as%20well%20as%20flavor%20and%20after%20about%2045%20minutes%20at%20425%20degrees,%20the%20vegetables%20were%20soft%20enough.%20%20First,%20they%20went%20into%20the%20pot%20with%20all%20of%20the%20other%20ingredients%20and%20I%20let%20it%20simmer%20a%20bit%20then%20I%20pureed%20the%20mixture.%20%20If%20you%20use%20a%20regular%20blender%20for%20the%20job,%20be%20sure%20to%20do%20it%20in%20small%20batches,%20cover%20it%20but%20leave%20a%20small%20gap%20for%20steam%20to%20escape%20and%20drape%20a%20towel%20over%20the%20top%20of%20the%20blender.%20%20Hold%20the%20top%20in%20place%20and%20blend%20on%20low-speed.%20%20Do%20not%20do%20this%20unless%20you%20are%20holding%20the%20top%20down%20or%20the%20lid%20could%20pop%20off%20and%20send%20hot%20sauce%20flying%20all%20over!%3C/p%3E%3Cp%3EPerciatelli%20is%20a%20hollow%20spaghetti%20tube%20and%20it%20was%20the%20perfect%20choice%20for%20such%20a%20creamy%20sauce.%20%20Some%20folks%20will%20tell%20you%20that%20you%20should%20never%20toss%20cook%20pasta%20with%20oil%20to%20keep%20it%20from%20clumping.%20%20The%20oil%20will%20make%20the%20pasta%20slippery%20and%20keep%20the%20sauce%20from%20sticking%20to%20it.%20%20Maybe%20so%20but%20I%20generally%20add%20the%20oil%20anyway,%20but%20I%20do%20make%20an%20effort%20to%20add%20only%20the%20smallest%20amount%20possible.%3C/p%3E%3Cp%3EPreheat%20the%20oven%20to%20425.%20%20Peel%20the%20squash%20and%20cut%20into%20large%20cubes.%20%20Peel%20the%20carrots%20and%20cut%20them%20along%20with%20the%20celery%20into%201%E2%80%B3%20slices.%20%20Roughly%20chop%20the%20onions.%20%20Halve%20the%20garlic%20cloves%20and%20the%20mushrooms%20and%20combine%20all%20of%20the%20vegetables%20in%20a%20bowl%20with%20the%20olive%20oil.%20%20Toss%20to%20coat%20and%20dump%20them%20onto%20a%20baking%20sheet%20that%20is%20lined%20with%20parchment%20paper%20or%20foil.%20%20Roast%20the%20vegetables%20until%20the%20carrot%20and%20squash%20are%20fork%20tender,%20about%2045%20minutes.%20%20Dump%20the%20roasted%20vegetables%20into%20a%20heavy%20bottomed%20stock%20pot%20with%20at%20least%20a%203%20quart%20capacity.%3C/p%3E%3Cp%3EAdd%20the%20tomatoes%20to%20the%20pot%20and%20using%20your%20hands,%20crush%20the%20tomatoes%20a%20bit%20to%20break%20them%20up.%20%20Add%20the%20basil,%20thyme,%20bay%20leaf,%20turmeric%20and%20smoked%20paprika.%20%20Add%201%20cup%20of%20the%20broth%20and%20bring%20the%20mixture%20to%20a%20gentle%20simmer.%20%20Allow%20the%20sauce%20to%20simmer%20for%20about%2030%20to%2045%20minutes.%20%20Using%20an%20immersion%20blender%20(if%20you%20have%20one)%20or%20a%20regular%20blender,%20puree%20the%20sauce;%20be%20sure%20to%20take%20precautions%20with%20a%20regular%20blender-read%20the%20warning%20above!%20%20Return%20the%20sauce%20to%20the%20pot%20and%20using%20the%20additional%201/2%20cup%20of%20broth,%20adjust%20the%20consistency%20of%20the%20sauce%20to%20your%20preference.%20%20Season%20with%20the%20salt%20and%20pepper%20and%20serve%20with%20your%20favorite%20pasta.%20%20Garnish%20with%20additional%20fresh%20parsley%20sprigs%20and%20grated%20Romano%20cheese%20if%20you%20like.%20%20The%20sauce%20can%20be%20canned%20using%20the%20same%20method%20for%20tomato%20sauce%20or%20it%20can%20be%20frozen%20in%20containers.%3C/p%3E%3Cp%3EPersonally,%20I%20am%20planning%20to%20grow%20butternut%20squash%20and%20plum%20tomatoes%20in%20the%20garden%20just%20so%20I%20can%20make%20more%20sauce%20this%20summer!%3C/p%3E%3Cp%3ELike%20Loading...%3C/p%3E%3Cp%3ERelated%3C/p%3E){kind=link}
