  • 1 Tbsp. ,veg. oil
  • 8 ounce Can tomato sauce
  • 2 x Cooked chicken breasts,shredded
  • 4 ounce Can green chiles

Directions

  2. Tortillas Lowfat sour cream-you found it!
  3. Saute/fry onion and garlic in veg. oil till onion is clear. Add in tomato sauce and simmer a few min. Set aside.
  4. Prepare tortillas-two per serving-as you do for soft tacos. On tortilla place pcs of shredded chicken breast and some cut up green chiles. Roll up and place folded side down on serving plate. Spoon warm tomato sauce over enchiladas and top with lowfat sour cream.

  7. In a small frying pan, immerse tortilla in one-half inch of warm (but not smoking) veg. oil for about thirty seconds, turning once and then immediately removing to plate with food turner. Tortilla must not get crisp but must remain pliable so which it can be easily rolled up.
