%20on%20a%20tour%20of%20%233GreatInns%20in%20the%20Amish%20Country%20of%20Ohio%20(much%20more%20on%20this%20coming).%20He%20lives%20in%20South%20Boston%20and%20gave%20me%20quite%20a%20colorful%20picture%20of%20what%20a%20Saturday%20holiday%20in%20that%20particularly%20Irish%20part%20of%20town%20might%20be%20like.%20That's%20a%20little%20too%20much%20party%20for%20me...%3C/p%3E%3Cp%3EBut%20it%20got%20me%20thinking%20Irish%20food%20has%20become%20quite%20sophisticated%20recently.%20I%20have%20been%20reading%20a%20few%20cookbooks%20from%20Irish%20chefs%20and%20it%20seems%20they%20have%20rediscovered%20and%20refined%20their%20country's%20traditional%20dishes%20in%20innovative%20ways.%20The%20result%20is%20some%20of%20the%20most%20interesting%20new%20cooking%20around.%3C/p%3E%3Cp%3EMy%20point%20is.%20We%20can%20celebrate%20this%20most%20Irish%20of%20holidays%20in%20more%20gentle%20fashion%20if%20we%20choose%20too.%20It's%20fun%20to%20drink%20green%20beer,%20pinch%20each%20other%20on%20the%20ass%20when%20we%20wear%20the%20wrong%20shade%20of%20green%20and%20generally%20cavort%20in%20a%20boisterous%20manner%20(in%20fact%20many%20of%20these%20St%20Paddy's%20Day%20shenanigans%20are%20being%20discussed%20this%20week%20on%20The%20Table%20Set.%20I%20hope%20you'll%20tune%20in).%20But%20I%20have%20decided%20to%20celebrate%20with%20a%20Potato%20Almond%20Cake.%20Yes,%20you%20read%20that%20right.%20As%20I%20said%20it's%20Daniel%20Boulud's%20recipe.%20It's%20a%20surprisingly%20light-textured%20cake,%20subtly%20sweet%20with%20a%20chicory%20cream%E2%80%93%20so%20it's%20particularly%20nice%20served%20with%20Irish%20coffee.%20GREG%3C/p%3E%3Cp%3EPrepare%20the%20syrup:%20Cut%20one%20vanilla%20bean%20lengthwise%20in%20half%20and,%20using%20the%20back%20of%20a%20knife,%20scrape%20the%20pulp%20out%20of%20the%20pod.%20Bring%20the%20water,%201/4%20cup%20sugar,%20and%20vanilla%20bean%20pod%20and%20pulp%20to%20a%20boil%20in%20a%20small%20saucepan.%20As%20soon%20as%20the%20syrup%20comes%20to%20a%20boil,%20pull%20the%20pan%20from%20the%20heat,%20stir%20in%20the%20dates,%20and%20set%20aside%20to%20cool.%3C/p%3E%3Cp%3EPrepare%20the%20cream:%20Put%20the%20cream,%20the%20chicory,%20and%20coffee%20beans%20in%20a%20medium%20saucepan%20and%20bring%20to%20a%20boil.%20Pull%20pan%20from%20the%20heat,%20cover%20and%20set%20the%20cream%20aside%20to%20infuse%20for%2015%20minutes.%20Meanwhile,%20place%20the%20chocolate%20in%20a%20metal%20bowl%20and%20set%20out%20a%20glass%20measuring%20cup.%3C/p%3E%3Cp%3EStrain%20the%20infused%20cream%20into%20the%20measuring%20cup%20and,%20if%20it%20doesn't%20come%20up%20to%20the%201-cup%20mark,%20add%20enough%20additional%20cream%20to%20make%20an%20even%20cup.%20wash%20and%20dry%20Saucepan,%20pour%20in%20the%20infused%20cream%20and%20bring%20it%20back%20to%20a%20boil.%20Add%20the%20hot%20cream%20to%20the%20chocolate%20in%20two%20additions,%20each%20time%20very%20gently%20whisking%20the%20cream%20into%20the%20chocolate.%20You%20don't%20want%20to%20beat%20air%20into%20the%20mixture,%20nor%20do%20you%20want%20to%20overcook%20it,%20so%20go%20slowly%20and%20easily.%20When%20the%20cream%20in%20homogenous,%20press%20a%20piece%20of%20plastic%20wrap%20against%20the%20surface%20to%20create%20an%20airtight%20seal%20and%20chill.%20Before%20serving%20whisk%20the%20cream%20until%20firm%20enough%20to%20form%20rounded%20spoonfuls.%3C/p%3E%3Cp%3EPrepare%20the%20cake:%20Peel%20the%20potatoes,%20cut%20them%20into%20quarters,%20and%20toss%20them%20into%20a%20pot%20of%20cold%20salted%20water.%20Bring%20to%20a%20boil%20and%20cook%20until%20the%20potatoes%20can%20be%20pierced%20easily%20with%20a%20knife.%20Drain%20the%20potatoes,%20then%20put%20them%20back%20into%20the%20pot%20and,%20shaking%20the%20pot%20constantly%20over%20medium%20heat,%20heat%20the%20potatoes%20just%20enough%20to%20cook%20off%20the%20extra%20moisture.%20Puree%20the%20hot%20potatoes%20through%20a%20food%20mill%20or%20potato%20rices%20and%20cool%20them%20to%20room%20temperature.%20Reserve%201%20(packed)%20cup%20of%20potato%20puree.%20Use%20the%20rest%20for%20something%20else.%3C/p%3E%3Cp%3ECenter%20a%20rack%20in%20the%20oven%20and%20preheat%20oven%20to%20400%20degrees%20F.%20Butter%20and%208-%20by%202-inch%20round%20cake%20pan,%20dust%20it%20with%20flour,%20tap%20out%20the%20excess,%20and%20place%20the%20pan%20on%20a%20baking%20sheet.%3C/p%3E%3Cp%3EWhisk%20together%20the%20flour,%20baking%20powder%20and%202%20tablespoons%20of%20the%20remaining%201/2%20cup%20sugar%20and%20set%20aside.%3C/p%3E%3Cp%3ECut%20the%20remaining%20vanilla%20bean%20lengthwise%20in%20half%20and,%20using%20the%20back%20of%20a%20knife,%20scrape%20the%20pulp%20out%20of%20the%20pod.%20Working%20in%20a%20mixer%20fitted%20with%20a%20whisk%20attachment,%20beat%20the%20egg%20whites%20with%20the%20vanilla%20bean%20pulp%20on%20medium-low%20speed%20until%20they%20are%20frothy%20and%20start%20to%20come%20together,%20about%202%20minutes.%20Increase%20the%20speed%20to%20medium-high%20and,%20when%20the%20whites%20form%20very%20soft%20peaks,%20start%20adding%206%20tablespoons%20of%20sugar%20in%20a%20slow,%20steady%20stream.%20Continue%20to%20beat%20until%20the%20whites%20are%20firm%20but%20still%20glossy.%20Set%20aside.%3C/p%3E%3Cp%3EIn%20a%20large%20bowl,%20whisk%20together%20the%20cooled%20reserved%201-cup%20of%20mashed%20potatoes,%20the%20butter,%20the%20remaining%202%20tablespoons%20cream,%20and%20egg%20yolks%20until%20smooth.%20Switch%20to%20a%20rubber%20sptchula%20and%20gently%20but%20thoroughly%20stir%20the%20flour%20mixture%20into%20the%20potatoes.%20Finally,%20delicately%20fold%20in%20the%20beaten%20egg%20whites.%3C/p%3E%3Cp%3EFill%20the%20prepared%20pan%20with%20the%20batter,%20gently%20smoothing%20the%20top.%20Sprinkle%20the%20top%20with%20the%20almond%20slivers%20and%20about%201%20tablespoon%20sugar.%20Slide%20the%20baking%20into%20the%20oven%20and%20bake%20for%2020%20to%2025%20minutes,%20rotating%20the%20sheet%20front%20to%20back%20at%20the%2010%20minute%20mark.%20When%20baked,%20the%20cake%20should%20be%20golden%20brown,%20just%20pulling%20away%20from%20the%20sides%20of%20the%20pan,%20and%20springy%20to%20the%20touch.%3C/p%3E%3Cp%3ERun%20a%20small%20blunt%20knife%20between%20the%20cake%20and%20the%20sides%20of%20the%20pan%20and%20unmold%20the%20cake%20onto%20a%20cooling%20rack.%20Invert%20the%20cake%20bring%20the%20topside%20back%20up%20and%20cool%20to%20room%20temperature%20on%20the%20rack.%3C/p%3E%3Cp%3ETo%20serve:%20Cut%20the%20cake%20into%208%20wedges%20and%20place%20one%20on%20the%20center%20of%20eight%20separate%20plates.%20Arrange%20some%20date%20slivers%20on%20the%20plate%20on%20one%20side%20and%20garnish%20each%20with%20a%20scoop%20of%20chicory%20cream.%20Drizzle%20the%20vanilla%20syrup%20around%20the%20cake%20and%20serve.%3C/p%3E){kind=link}
