Dirk's Sweet Potato And Turnip Soup Recipe

Ingredients

  • 1 x Leek
  • 1 med Red onion
  • 1 lrg Turnip, (more would be good)
  • 2 x White potatoes
  • 1 x Sweet potato
  • 1 Tbsp. Fresh minced rosemary
  • 2 quart Vegetable stock and/or possibly water Salt and pepper to taste

Directions

  1. Cut off dark green tops from leeks, rinse very thoroughly, and dice. Chop onion, and saute/fry leeks and onion in the bottom of a large soup pot in a little water till soft. Peel and dice turnips and potatoes, and add in to soup pot. Add in a little stock and stew for 5 min, stirring gently. Add in the rest of the stock and the rosemary, and simmer for 15 min, or possibly till the potatoes are fully cooked. Puree about half of the soup in a food processor or possibly blender, and return to the pot. Season to taste with salt and pepper, reheat, and serve.
