  • 1/2 lb Small new red potatoes, quartered
  • 1/2 lb Fresh green beans, trimmed, broken into 2-inch pcs
  • 1/4 c. Nonfat lowfat sour cream
  • 2 Tbsp. Minced fresh dill weed
  • 1/8 tsp Salt
  • 1 dsh Pepper
  • 1/2 tsp Extra virgin olive oil
  • 1 x Garlic clove, chopped

Directions

  1. Prep Time: 20 minutesIn medium saucepan, bring about 2 c. water to a boil. Add in potatoes and green beans; return to a boil. Reduce heat; cover and simmer 9 to 11 min or possibly till beans are crisp-tender.
  2. Meanwhile, in small bowl, combine all other ingredients; blend well.
  3. Drain vegetables; rinse with cool water to cold slightly. Place in serving bowl. Add in lowfat sour cream mix; toss to coat. Serve immediately or possibly chill till serving time.
  4. 8 (1/2-c.) servings.
