Ingredients

  • 8 slc bread (sourdough, wheat, rye, your favorite)
  • 2 Tbsp. butter
  • 1/4 c. finely minced onion
  • 1/4 c. finely minced green bell pepper
  • 4 x Large eggs
  • 1/2 c. finely minced cooked ham
  • 1/3 tsp salt
  • 1 x pepper to taste

Directions

  1. Lightly toast the bread.
  2. In a medium skillet, heat the butter to coat the bottom of the pan.
  3. Saute/fry the onion with the green pepper till the onions become transparent. Remove from skillet.
  4. In a small bowl, beat the Large eggs. Add in the minced ham and salt, season with pepper to taste.
  5. Pour the Large eggs into the skillet and cook over low heat till they are set. Cut into 4 sections. Place on toasted bread. Top with sauteed onions and green peppers.
