Potato Corn Chowder by NelskiI got this recipe from the Taste of Home Comfort Food Diet Cookbook. I wasn't sure how it would turn out using tofu and soy milk to thicken and cream it up, but it turned out great. I really like this soup and will be making it again. The recipe is only for 2 servings so I will double or triple next time for leftovers. |

Mashed Potatoes by Candice GoodyearI don't like instant mashed potatoes at all. I make mine from scratch like many cooks out there. I like them either with butter and sour cream or butter and milk in them both are delicious. But, if you don't have milk or sour cream on hand you can substitute 1/4 cup real mayo, still taste great. |
