%20The%20cod%20was%20so%20sweet%20and%20moist,%20much%20nicer%20than%20I%20had%20remembered%20the%20cod%20being%20back%20home%20.%20.%20.%20the%20chips%20hand%20cut%20and%20chunky%20and%20crisp.%20The%20batter%20.%20.%20.%20crisp%20and%20melt%20in%20your%20mouth%20scrummy%20.%20.%20.%3C/p%3E%3Cp%3EBy%20the%20end%20of%20the%20meal%20I%20was%20so%20stuffed%20I%20could%20barely%20move%20.%20.%20.%20two%20fish%20and%20chip%20dinners%20for%20%C2%A34.60%20.%20.%20.%20you'd%20be%20lucky%20to%20get%20away%20with%20one%20fish%20and%20chips%20dinner%20for%20that%20price%20now!%20But%20.%20.%20.%20then%20again,%20that%20was%2012%20years%20ago%20and%20a%20lot%20has%20changed%20in%20those%2012%20years!%3C/p%3E%3Cp%3EWhen%20I%20was%20growing%20up,%20I%20used%20to%20be%20a%20tiny%20bit%20jealous%20of%20the%20catholic%20kids%20in%20my%20class%20at%20school%20.%20.%20.%20they%20always%20got%20fish%20for%20dinner%20on%20Fridays%20and%20I%20loved%20fish.%20I%20don't%20know%20if%20it%20was%20too%20expensive%20or%20what%20.%20.%20.%20but%20I%20know%20we%20only%20ever%20very%20rarely%20had%20fish.%20It%20was%20a%20real%20treat.%20Usually%20on%20Fridays%20we%20had%20hot%20dogs%20.%20.%20.%20which%20were%20quite%20good%20the%20way%20my%20mom%20did%20them%20.%20.%20.%20but%20I%20still%20would%20have%20loved%20to%20have%20had%20fish.%3C/p%3E%3Cp%3EToday%20I%20oftimes%20choose%20to%20do%20my%20fish%20in%20simple%20ways,%20rather%20than%20deep%20fry%20it%20.%20.%20.%20saving%20the%20luxury%20of%20those%20deep%20fried%20fish%20calories%20to%20a%20once%20in%20a%20blue%20moon%20treat,%20from%20my%20favourite%20fish%20and%20chips%20place%20in%20town.%20This%20is%20a%20very%20simple,%20and%20yet%20easy%20way%20of%20preparing%20fish%20that%20gives%20you%20moist%20fish%20.%20.%20.%20with%20a%20deliciously%20flavoured%20crisp%20crust%20.%20.%20.%20without%20all%20the%20frying%20and%20faff.%3C/p%3E%3Cp%3EThe%20seasoned%20fish%20is%20brushed%20with%20a%20simple%20butter,%20olive%20oil%20and%20Dijon%20mustard%20mix%20and%20then%20has%20a%20crisp%20breadcrumb%20mixture%20of%20panko%20and%20parsley%20flakes%20pressed%20into%20the%20surface%20.%20.%20.%20and%20then%20you%20drizzle%20the%20remainder%20of%20the%20butter%20mixture%20over%20top.%20About%2015%20minutes%20later,%20you%20are%20rewarded%20with%20beautifully%20cooked%20fish%20with%20a%20nice%20crisp%20crust%20.%20.%20.%20not%20long%20.%20.%20.%20but%20just%20long%20enough%20to%20throw%20together%20.%20.%20.%3C/p%3E%3Cp%3E.%20.%20.%20a%20delicious%20and%20easy%20homemade%20tartar%20sauce!%20It%20can%20be%20very%20low%20fat%20if%20you%20use%20low%20fat%20mayo%20instead%20of%20the%20regular%20kind.%20A%20bit%20of%20mash%20on%20the%20side%20and%20a%20few%20green%20vegetables%20and%20Bob's%20your%20Uncle!%20I%20don't%20know%20what's%20not%20to%20like%20about%20this%20meal,%20easy,%20quick%20and%20DELICIOUS!%3C/p%3E%3Cp%3E*Crunchy%20Baked%20Cod%20with%20Horseradish%20Tartar%20Sauce*%3C/p%3E%3Cp%3EServes%204%3C/p%3E%3Cp%3EDelicious%20baked%20cod%20with%20a%20crunchy%20flavourful%20panko%20crust,%20served%20up%20with%20a%20fantastic%20homemade%20tartar%20sauce!%3C/p%3E%3Cp%3EPreheat%20your%20oven%20to%20200*C/400*F/%20gas%20mark%205.%20Line%20a%20baking%20sheet%20with%20some%20aluminium%20foil.%20Lightly%20spray%20with%20cooking%20spray.%3C/p%3E%3Cp%3ERinse%20your%20cod%20loins%20and%20then%20pat%20them%20dry%20with%20some%20paper%20kitchen%20towelling.%20Place%20them%20on%20the%20baking%20tray.%20Season%20with%20some%20salt%20and%20pepper%20to%20taste.%20Melt%20the%20butter%20together%20with%20the%20olive%20oil.%20Whisk%20in%20the%20Dijon%20mustard%20and%20cayenne%20pepper.%20Brush%20the%20top%20of%20each%20cod%20loin%20with%20this%20mixture.%20Divide%20the%20bread%20crumbs%20between%20each%20loin,%20pressing%20them%20onto%20the%20fish%20to%20help%20it%20to%20adhere.%20Drizzle%20with%20the%20remainder%20of%20the%20butter%20mixture,%20dividing%20it%20equally.%3C/p%3E%3Cp%3EBake%20for%2015%20to%2018%20minutes.%3C/p%3E%3Cp%3EWhile%20the%20fish%20is%20baking%20make%20your%20tartar%20sauce.%20Stir%20together%20the%20celery,%20cornichons,%20parsley,%20horseradish,%20mayonnaise,%20mustard%20powder%20and%20lemon%20juice.%20Season%20to%20taste%20with%20fine%20sea%20salt%20and%20freshly%20ground%20black%20pepper.%3C/p%3E%3Cp%3EServe%20with%20the%20cooked%20fish.%20Delicious!%3C/p%3E%3Cp%3EMake%20sure%20you%20come%20back%20tomorrow.%20I%20have%20a%20REAL%20treat%20in%20store%20for%20you!%20You%20won't%20want%20to%20miss%20it!%3C/p%3E){kind=link}
