Cravings: Mushroom & Leek Torte Recipe

Ingredients

• Mushroom & Leek Torte: (inspired from Living and Eating Cookbook)
• 16oz. package wild mushroom mix, sliced
• 2 large leeks (or 4 small ones), washed & trimmed, saving only the white parts, sliced thin
• 3 large eggs, beaten
• 2 cups of freshly grated Parmigiano Reggiano cheese
• 1 cup heavy cream
• 1/4 cup chopped fresh parsley
• 3 tbsp butter
• olive oil
• 1 tbsp balsamic vinegar
• salt & pepper
