This is a combination of different recipes that I have tweaked and believe I have created the perfect chicken taco soup. It is easy and tastes GREAT! The seasoning is not my own it is actually Bill Echlos Taco Seasoning I got off the internet. When making the soup I use heaping fulls of each seasoning ingredient.

A basic, simple chowder to fill those little holes in your menu. Tastes great but is always better the second day so make sure you make too much. Easy to modify by adding or replacing your favorite food to make it your own. It's almost impossible to screw this up. Kudos to my sister Jann Hartman for the basic instructions.

Dark rich style gumbo. Have all veggies, seasons, chicken and sausage prepared and ready before you start the roux. Be very careful not to burn roux if you smell it burning throw it out. Do not try to salvage. 7-8 Qt (#12) cast iron dutch oven. Put in bowl over rice or potato sald.
