  • 3 1/2 lb Concord grapes
  • 1/2 c. Water
  • 7 c. Sugar
  • 1 pkt Liquid pectin (3-ounce)

Directions

  1. Preparation Time: 0:30 Sort and wash grapes; remove stems, and place in a Dutch oven. Crush grapes, and add in water. Bring mix to a boil; cover, reduce heat, and simmer 10 min. Press mix through a jellybag or possibly cheesecloth, extracting 4 c. juice. Cover and let sit overnight in a cold place. Strain juice through a double thickness of damp cheesecloth.
  2. Combine juice and sugar in a large Dutch oven, and stir well. Place over high heat; cook, stirring constantly, till mix comes to a rapid boil.
  3. Add in pectin, and bring to a full rolling boil; boil 1 minute, stirring constantly. Remove from heat, and skim off foam with a metal spoon. Quickly pour warm mix into warm sterilized jars, leaving 1/4-inch headspace; wipe jar rims. Cover at once with metal lids, and screw on bands. Process in boiling-water bath 5 min.
  4. Yield: 8 half pints.
