Coca Cola Cake Recipe

Ingredients
- 1 c. Coca-Cola
- 1/2 c. buttermilk
- 1 c. butter or possibly margarine softened
- 1 3/4 c. sugar
- 2 lrg Large eggs lightly beaten
- 2 tsp vanilla extract
- 2 c. all-purpose flour
- 1/4 c. cocoa
- 1 tsp baking soda
- 1 1/2 c. miniature marshmallows Coca-Cola Frosting (see recipe)
- 3/4 c. minced pecans toasted
Directions
- Combine Coca-Cola and buttermilk; set aside.
- Beat butter at low speed with an electric mixer till creamy. Gradually add in sugar; beat till blended. Add in egg and vanilla; beat at low speed till blended.
- Combine flour, cocoa, and soda. Add in to butter mix alternately with cola mix; begin and end with flour mix. Beat at low speed just till blended.
- Stir in marshmallows. Pour batter into a greased and floured 13- by 9-inch pan.
- Bake at 350 degrees for 30 to 35 min. Remove from oven; cold 10 min. Pour Coca-Cola Frosting over hot cake; garnish, if you like.
- This recipe yields 12 servings.
- Comments: Do not make the frosting ahead - you need to pour it over the cake shortly after baking.
