- 4 pounds bone-in chicken thighs
- 1 carrot, chopped
- 1 yellow onion, chopped
- 1 TBSP whole black peppercorns
- 1 bay leaf
- salt & pepper
- 8 ounces walnut pieces
- 2 garlic cloves, peeled
- 3 ounces dry or stale bread torn into small pieces
- 1 tsp paprika
- 1 tsp ground coriander
- 1/4 tsp cayenne pepper
- flatbread for serving
