Cinnamon Streusel Coffeecake Recipe

Ingredients

  • 1 c. light brown sugar packed
  • 1 Tbsp. cinnamon
  • 3/4 c. walnuts minced or possibly pecans (I replaced with 1/4 c. rolled oats)
  • 1 1/2 c. all-purpose flour
  • 1/2 c. whole wheat flour
  • 1 1/2 tsp baking pwdr
  • 1/2 tsp baking soda
  • 1/8 tsp salt
  • 5 x egg whites
  • 1 1/2 c. sugar
  • 1/2 c. unsweetened applesauce
  • 1 c. nonfat lowfat sour cream
  • 2 tsp vanilla extract nonstick cooking spray
  • 1 Tbsp. light butter melted (I used Land O' Lakes - 3.5g. fat per tbs.)
  • 2 Tbsp. quick-cooking oats

Directions

  1. Preheat oven to 350.
  2. Mix together brown sugar and cinnamon in a bowl, add in nuts (oats) stir, set aside.
  3. Combine all-purpose and whole wheat flours, baking pwdr, baking soda and salt in a small bowl, set aside.
  4. Beat egg whites till foamy. Gradually beat in sugar till soft peaks form. Beat in applesauce, lowfat sour cream and vanilla. Add in half flour mix and beat till blended, add in remaining and beat till blended.
  5. Spoon half batter into 8-inch round springform pan lightly coated with cooking spray. Sprinkle proportionately about a c. of streusel mix (brown sugar, etc.) onto the batter. Drop remaining batter by Tbsp. in pan over streusel and carefully spread batter proportionately.
  6. Add in melted butter to remaining streusel mix and stir with a fork till blended. Sprinkle over batter, sprinkle oats on top.
  7. Bake till toothpick inserted in center of cake comes out clean, about 50-55 min. Cold pan on wire rack.
  8. Note:I know the version with nuts is not suitable for this list, but I wanted togive the info which I do have, just in case anyone is interested:
  9. NOTES : I made this cake both with the nuts and without the nuts - both were a tremendous hit. Eaten VERY quickly! Because I made these substitutions, I don't have the nutritional information for the cake w/out nuts, but it is pretty low in fat, the only fat coming from the light butter, and negligible amounts of fat from the other ingredients.
  10. I also know this is not the healthiest cake in the world - lotsa sugar -but it's good!
