Chicken With Couscous Timbale Recipe

Ingredients

  • 1 x Chicken fillet
  • 2 x Rashers of back bacon Coriander and extra virgin olive oil, liquidised together Mango Onion Tomato Coriander Salt and pepper Aubergine Red pepper Yellow pepper Baby gemsquash Baby marrow

Directions

  1. Roast the vegetables with salt and pepper and coriander oil.
  2. Prepare the couscous. Layer couscous and vegetables in the mould, one on top of the other.
  3. Chicken: flatten chicken fillet with wooden mallet. Put stuffing at one end and roll up.
  4. Put two rashers of back bacon down and wrap chicken roll in bacon.
  5. Bake in the oven.
