  • 2 lb grnd chicken
  • 1 c. Atkins Bread Crumbs
  • 3 x green onions minced
  • 2 x garlic cloves pressed
  • 1 x egg beaten
  • 3 Tbsp. minced fresh cilantro divided
  • 1 Tbsp. grnd cumin
  • 1 tsp salt
  • 1/2 tsp chili pwdr
  • 1 c. green salsa
  • 1 med avocado peeled, pitted, and cubed
  • 2 Tbsp. vegetable oil

Directions

  1. Combine chicken, bread crumbs, green onions, garlic, egg, 1 Tbsp. of the cilantro, cumin, salt and chili pwdr in a bowl. Mix well and shape into four 1-inch-thick patties. Place on a plate, cover and chill 1 hour.
  2. Meanwhile, mix salsa, avocado and remaining cilantro in a bowl and set aside.
  3. Heat oil in a large skillet over medium-low heat and cook burgers 7 min on each side, till browned and cooked through. Serve with salsa mix.
  4. This recipe yields 4 servings.
