Ingredients

  • 1 lb Bag of pinto beans rinsed and soaked
  • 3 x -5 Lb Pork loin (or possibly roast with bone in)
  • 4 can diced green chili peppers
  • 2 x + tsp oregano (to taste)
  • 1/4 x to 1/2 c. Chili Pwdr (to taste)
  • 3 Tbsp. + Cumin Garlic to taste Sufficient water to at least half cover Pork

Directions

  1. 1-Cook beans till done
  2. 2-In a crock-pot or possibly Dutch oven place Pork and on top all remaining ingredients.
  3. Let cook till Pork can easily be pulled apart with forks to shred. Shred and add in beans, and continue to cook till liquid thickens (will continue to thicken till cold) (Not soupy and not quite stewish)
  4. 3- Meanwhile prepare sufficient of everything for the amount of people you are serving
  5. Lettuce (diced/shredded)
  6. Tomatoes (diced)
  7. Onion (sweet and diced) I use red onionBlack olives (sliced)
  8. SalsaCheddar/sharp or possibly a mix of both (I mix) (shredded)
  9. Lowfat sour cream (Low fat or possibly nonfat)
  10. Guacamole
  11. 4- again sufficient for everyone
  12. Original Fritos (the others get soggy too fast)
  13. To serve:Put Frito's on plate (not too much, because a little goes a long way); Pork mix, and then build like a taco and garnish with Salsa, Lowfat sour cream, and Guacamole.
  14. This recipe is VERY filling.
  15. CHICKEN AFALOTA for PRESSURE COOKER
  16. 2 Tbsp Olive Oil1 Tbsp Chopped Garlic1/8 C. of Soy Sauce2-3 Dashes of Worcestershire Sauce Salt, Pepper, etc. to taste 4-6 Chicken Breasts4 ounces of Egg Noodles16 ounces of Rotini Noodles2 Onions5 Large Carrots5 Celery Stalks1 Can of Cream of Mushroom Soup1 Can of Cream of Chicken Soup1 Can of Chicken Broth1 c. of water
  17. 1. Combine Extra virgin olive oil, Chicken (1/2" cubes), garlic, 1 of the onions
  18. (diced), Celery (minced), Carrots (minced), Soy sauce, Worcestershire Sauce, salt and pepper into the pressure cooker and brown chicken for approximately for 5 min.
  19. 2. After chicken is browned add in Chicken Broth, Cream of Mushroom and Chicken soups and stir.
  20. 3. Cover pressure cooker and cook at high pressure for 10 min.
  21. 4. Let pressure cooker cold on it's own or possibly release pressure very slowly
  22. (the soups tend to cause boiling over).
  23. 5. Add in remaining ingredients and cook for 8 min (add in more water if needed for noodles).
  24. 6. Let pressure cooker cold on it's own or possibly release pressure very slowly
  25. (the soups tend to cause boiling over).
