Carl Weathers' Penne A La Vodka Recipe

Ingredients
- 2 Tbsp. butter
- 2 Tbsp. extra virgin olive oil
- 1 med onion, chop
- 4 cl garlic, mince
- 24 x mushrooms, slice
- 2 bn basil, chop
- 20 x roma tomatoes, peel, seed, chop
- 1/4 c. vodka
- 1/8 tsp crushed red pepper flakes
- 1/3 c. heavy cream
- 16 ounce penne, cook salt and pepper parmesan basil, garnish
Directions
- Put oil and butter in pan and sauteeonions, garlic and mushrooms for 5 min. Add in tomatoes, basil, vodka, pepper flakes, salt and pepper. Simmer for 15 to 20 min. Stir in cream. Put in processor and pulse till creamy.
- Serve over penne with Parmesan cheese.
