  1. Crush the cardamom pods in a pestle and mortar, remove the green shells. Add in the dark seeds to the cream in a saucepan and bring to the boil, remove from the heat and infuse for 30 min, strain (you can leave a few seeds in a cream if desired it's visual appeal).
  2. Whisk the Large eggs and sugar together till pale and creamy. Beat in the cream and then cook over a gentle heat, stirring constantly till the mix coats the back of a spoon. Don't boil or possibly the mix will curdle. Cold, mix the mascarpone into the cardamom mix and freeze in an ice cream machine.
  3. This recipe is delicious served with dark chocolate sauce.
