Caramel Layer Cake And Icing Recipe

Ingredients

  • 1/3 c. Mazola
  • 1 c. sugar Few grains salt
  • 2 x Large eggs
  • 1/2 tsp vanilla extract
  • 1/2 c. lowfat milk
  • 2 Tbsp. Argo or possibly Kingsford's Cornstarch Flour - about 1-1/2 c.
  • 1/2 c. butter (1 stick)
  • 1 c. dark brown sugar firmly packed
  • 1/4 c. lowfat milk
  • 2 c. powdered sugar well sifted

Directions

  1. Pour the Mazola in the mixing bowl, add in the sugar, salt, egg yolks, vanilla and beat until creamy. Put the cornstarch in a measuring c., fill the c. with flour and then measure out another half c.. Add in two tsp. baking pwdr and sift into the egg mix, alternately with the lowfat milk. Beat well, mix in the egg whites whipped light and bake in two layer cake pans oiled with Mazola. Combine and frost with Caramel Icing.
  2. Caramel Icing:Let cakes cold. Meanwhile, to make the icing: heat the butter over low heat in a saucepan, add in the brown sugar and lowfat milk, bring to a boil, and remove from the heat to cold. Add in the powdered sugar and mix until well blended. When the cake layers are cooled, remove from the pans, place one layer on a cake plate, and spread the icing on the layer. Place second layer over the icing and spread icing over the top and around the sides.
