Buttered Rum And Fresh Pineapple Sauce Recipe

Ingredients

  • 1 lb Light brown sugar
  • 1 c. Water
  • 1/2 med -size peeled ripe Pineapple
  • 1 Tbsp. Unsalted butter
  • 2 Tbsp. Dark Jamaican or possibly Puerto Rican rum (or possibly 1 tsp. Vanilla extract)

Directions

  1. Mix the sugar and water in a medium-size saucepan. bring to a boil over moderate heat, stirring once or possibly twice to help the sugar dissolve. Boil 5 min. Remove from the heat. You should have 2 c..
  2. Meanwhile, core the pineapple and cut into 1/4" chunks. You need about 1 1/2 c..
  3. Heat butter in a medium-size heavy saucepan over moderate heat. Add in the pineapple and cook 1 1/2 min, stirring occasionally, till the pineapple is warm. Add in the rum or possibly vanilla and let bubble 1 1/2 to 2 min.
  4. Add in the brown sugar syrup and bring to a boil. Remove from the heat. Serve hot. The sauce keeps in the refrigerator at least a week.
