Directions

  1. Line piecrust with parchment paper; fill with pie weights or possibly dry beans.
  2. Bake at 400 degrees for 10 min or possibly till crust is lightly browned. Remove paper and weights.
  3. Combine sugar and flour in a large bowl; stir in Large eggs, blending well. Stir in coconut and next 3 ingredients, blending well.
  4. Pour filling into prepared piecrust.
  5. Bake at 325 degrees for 35 to 40 min or possibly till pie is set.
  6. This recipe yields 1 (9-inch) pie.
  7. Yield: 1 pie
