There are those who totally stay away from red meat as part of their overall health regimen or their chosen diet, and there are those who choose to go the path of "everything in moderation." For the latter, they try to enjoy their beef burgers every now and then, limiting themselves to single patties and skipping the cheese. But what if you can have your burger and eat it too -- the 'mini' way? Yes, I'm talking about sliders, those mini-burgers usually available at diners or fastfood chains like White Castle. What a great way to eat your beef in moderation.

For this recipe, the beef patty I use is closer to the Filipino bola-bola, or the meatball-sized favorite in Filipino cuisine. You decide whether or not you want your slider to come with the usual accompaniment of cheese, lettuce, onion and tomato, but either way, you know you are adhering to moderation. Unless, of course, you end up coming back for seconds or thirds.

  • 1 lb ground beef
  • 1 small white onion, chopped
  • 1 pc carrot, peeled and grated
  • 2 stems green onions, chopped
  • 1/4 cup raisins
  • 4 tbsps soy sauce
  • 2 eggs
  • 1/2 cup olive oil
  • 1 cup corn starch
  • 1 doz. mini burger buns with sesame seeds
  • 1/3 cup Jufran banana ketchup (available at Asian supermarkets)
  • 1/3 cup low-fat mayonnaise

Directions

  1. In a mixing bowl, combine ground beef, white and green onions, carrots, raisins, eggs and soy sauce. Mix well.
  2. Spread cornstarch on a flat plate.
  3. Mold the beef mixture into round patties, about 1 1/2 inches in diameter and roll them in the cornstarch, making sure they are evenly coated.
  4. In a medium frying pan, heat olive oil in medium-high heat.
  5. Fry the meatballs until they turn dark brown and partially blackened, turning them over on both sides to cook.
  6. Place cooked meatballs on a plate lined with paper towel to drain excess oil.
  7. Lightly toast the mini buns.
  8. Prepare sliders by coating the bottom side of the bun with mayonnaise.
  9. Place a patty on top of the bun and coat with banana ketchup. Place the top side of the bun over the beef patty and secure the slider with a toothpick.
