Ingredients

  • Blueberry Cheesecake Ice Cream
  • Graham Cracker Crust:
  • 1 cup finely ground graham cracker crumbs
  • 1 Tbsp sugar
  • 1/4 cup butter, melted
  • Combine all ingredients and press into the bottom of a baking dish or pie pan. Bake at 350° for about 10 minutes. Cool completely. Break into pieces.
  • Blueberry Sauce
  • 1/4 cup sugar
  • 1 Tbsp cornstarch
  • 1/4 cup water
  • 2 Tbsp frozen orange juice concentrate
  • 1 1/2 cups fresh or frozen blueberries
  • Cheesecake Ice Cream Base:
  • 8oz cream cheese (I used light)
  • 1 cup sugar
  • 2 cups cream
  • 1 cup milk
  • 1 tsp vanilla
  • 1 tsp lemon juice
