Ingredients

  • 8 ounce blue cheese
  • 1 c. unsalted butter room temperature (2 sticks)
  • 2 x French bread baguettes or possibly 4 sourdough (2 pounds total), flutes - halved lengthwise Minced celery tops

Directions

  1. Blend cheese and butter in processor till smooth. (Can be prepared 2 days ahead. Cover and chill. Bring to room temperature before using.)
  2. Preheat broiler. Broil bread crust side up till crisp. Turn and broil cut side till light brown. Spread cheese mix over cut side of bread.
  3. Sprinkle liberally with pepper. Broil till cheese bubbles and begins to
  4. brown. Remove from broiler and sprinkle bread with celery. Cut crosswise
  5. into 1-inch pcs.
  6. Serves 12.
