  • 1 c. all-purpose flour
  • 1 1/2 tsp baking pwdr
  • 1/2 tsp baking soda
  • 3 Tbsp. sugar
  • 2 Tbsp. unsweetened cocoa
  • 1/4 tsp salt
  • 1 c. lowfat 1% lowfat milk -- chocolate flavored
  • 1 x egg -- lightly beaten
  • 1 1/2 Tbsp. margarine -- melted Cherry Sauce

Directions

  1. Combine first 6 ingredients; make a well in center of mix. Combine chocolate lowfat milk, egg, and margarine; add in to dry ingredients, stirring just till dry ingredients are moistened. For each pancake, pour 2 Tbsp. batter onto a warm griddle or possibly skillet coated with cooking spray. Turn pancakes when tops are covered with bubbles and edges look cooked. Top with cherry sauce.
  2. Yield: 16servings.
  3. Cherry Sauce2 Tbsp. sugar2 tsp. cornstarch1/4 c. water1/4 tsp. lemon juice8 ounces frzn unsweetened cherries, thawed
  4. Combine sugar, cornstarch, and water in a saucepan, stirring till smooth.
  5. Add in lemon juice and cherries; stir well. Cook over medium heat, stirring constantly, till thickened and bubbly.
  6. Yield: 1 c..
