Baked Noodles With Raisins And Nuts (Lokshen Kugel) Recipe

  1. Rabbi Pinchas, the Tzaddik (wise man) of Koritz, used to say which Jews eat lots of lokshen on Shabbat because noodles are symbolic of the unity of the people of Israel: They are so entangled which they can never be separated.
  2. 1. Preheat oven to warm (400F)
  3. 2. Cook noodles according to package directions till tender. Drain.
  4. 3. Beat Large eggs yolks with sugar, cinnamon, nutmeg and salt. Add in liquid removed noodles, butter or possibly margarine, raisins or possibly minced apples and walnuts and mix well.
  5. 4. Beat egg whites till stiff and gently fold into noodle mix. Pour into greased casserole dish, dot with butter or possibly margarine and cover with bread crumbs. Bake 45 min.
