Aubergine pie Recipe
for me it is one of the most delicious pies ever. it is a home tradition to us since a friend has given it to my mother many years ago.
Ingredients
- for the pastry:
- 3 cups flour
- 1 teaspoon salt
- 1/2 teaspoon baking powder
- 1/2 cup fresh butter or margarine
- 1/2 cup greek yoghurt
- 1 egg
- for the filling
- 1/2 kg aubergines
- 1 onion of medium size, chopped
- 4 tablespoons olive oil
- 1 cup of smashed feta cheese (or other white soft cheese)
- 1/2 cup of parmiggiano
- 4 eggs
- salt
- pepper
- parsley
- 1/2 cup greek yoghurt
Directions
- we prepare a firm pastry with all the ingredients and we keep it in the refrigerator for 1/2 - 1 hour.
- we cut in small cubes the aubergines, we sprinkle salt and we let them in a strainer for 1 hour in order to dry.
- we sautee the onion and the aubergines in the olive oil.
- we remove from the heat,
- we add the cheese, the eggs - after keeping apart 2 tablespoons to be spreaded on the top of the pie -, enough pepper and finely chopped parsley, and the yoghurt.
- we spread butter in an oven pan no.26. we open filo with the 2/3 of the pastry and we cover the pan. we put the filling mass and we cover with another filo made with the pastry left.
- we spread the egg we have kept before and we bake in a medium oven for about 45 minutes.
